- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.
- In a large bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, 1/2 cup of packed brown sugar, 1 tsp of baking powder, 1/2 tsp of baking soda, 1/2 tsp of ground cinnamon, and 1/4 tsp of salt. Mix well.
- Stir in 1 cup of diced apples, ensuring they are evenly distributed throughout the dry ingredients.
- In a separate bowl, whisk together 1/2 cup of milk, 1/4 cup of vegetable oil, 1 large egg, and 1 tsp of vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
