Ingredients

  • 1 cup rolled oats Old-fashioned oats work best
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar Packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup apples Peeled and diced
  • 1/2 cup milk Any type will do
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Equipment

  • Muffin tin
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Oven

Method

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.
  2. In a large bowl, combine 1 cup of rolled oats, 1 cup of all-purpose flour, 1/2 cup of packed brown sugar, 1 tsp of baking powder, 1/2 tsp of baking soda, 1/2 tsp of ground cinnamon, and 1/4 tsp of salt. Mix well.
  3. Stir in 1 cup of diced apples, ensuring they are evenly distributed throughout the dry ingredients.
  4. In a separate bowl, whisk together 1/2 cup of milk, 1/4 cup of vegetable oil, 1 large egg, and 1 tsp of vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  6. Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Chef's Tips:
• For added flavor, try adding a handful of chopped nuts or raisins to the batter
• Avoid overmixing the batter to keep the muffins tender and light
• Serve warm with a pat of butter or a drizzle of honey for an extra treat
Food Safety:
• Ensure eggs are fresh and stored at the proper temperature
• Store muffins in an airtight container to prevent spoilage
