Ingredients

  • 1 pound ground beef 80/20 blend for best flavor and moisture
  • 1 small onion finely grated
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  • In a large bowl, combine the ground beef, grated onion, minced garlic, and chopped parsley. Mix until well combined.
  • Add the cumin, coriander, cinnamon, allspice, salt, and black pepper. Mix thoroughly to ensure even distribution of spices.
  • Divide the mixture into 8 portions and shape each into a long, cylindrical meatball around a skewer, if using.
  • Preheat your grill to medium-high heat or a skillet over medium heat. Brush the kofta with olive oil to prevent sticking.
  • Grill or pan-fry the kofta for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C).
  • Remove from heat and let rest for a few minutes before serving.

Notes

Chef's Tips:
• For a juicier kofta, use an 80/20 ground beef blend
• Avoid overmixing the meat to prevent tough meatballs
• Serve with pita bread, tzatziki, and a fresh salad for a complete meal
