Ingredients

  • 1 can corned beef 12 oz
  • 2 cups potatoes diced
  • 1 cup onion diced

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to brown and soften.
  • Add diced onions and minced garlic to the skillet. Cook for another 5 minutes until the onions are translucent and the garlic is fragrant.
  • Break up the canned corned beef and add it to the skillet. Stir to combine with the potatoes and onions. Cook for an additional 5 minutes, allowing the flavors to meld and the corned beef to heat through.
  • Season with salt and pepper to taste. If desired, create small wells in the hash and crack an egg into each well. Cover the skillet and cook for 3-5 minutes until the eggs are cooked to your liking.
  • Serve hot, garnished with fresh herbs if desired.
