Ingredients

  • 1 head cauliflower cut into florets
  • 1 head broccoli cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk whole or 2%
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Bring a large pot of salted water to a boil. Add the cauliflower and broccoli florets and cook for about 5 minutes until just tender. Drain well and set aside.
  • In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until golden. Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.
  • Remove the saucepan from heat. Stir in 3/4 cup of the shredded cheddar cheese, Parmesan cheese, garlic powder, and onion powder until melted and smooth. Season with salt and pepper to taste.
  • Place the drained cauliflower and broccoli in the prepared baking dish. Pour the cheese sauce over the vegetables, mixing gently to coat evenly. Sprinkle the remaining 1/4 cup of shredded cheddar cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
