Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 cup heavy cream whipped
  • 2 3.4 oz lemon pudding mix instant
  • 3 cups milk cold

Instructions

  • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9x13 inch baking dish to form the crust. Refrigerate for 30 minutes to set.
  • In a separate bowl, beat cream cheese until smooth. Gradually add powdered sugar and continue beating until well combined. Fold in whipped heavy cream until the mixture is light and fluffy. Spread this layer over the chilled crust.
  • In another bowl, whisk together lemon pudding mix and cold milk until thickened, about 2 minutes. Let it sit for 5 minutes to set further, then spread over the cream cheese layer.
  • Refrigerate the Lemon Lush for at least 2 hours before serving to allow the layers to set and flavors to meld.

Notes

Chef's Tips:
• For a firmer crust, bake it at 350°F for 10 minutes before adding the layers.
