Ingredients

  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 large eggs separated
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd for filling

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes. Add the egg yolks and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • In another small bowl, beat the egg whites until frothy. Roll the dough into 1-inch balls, dip each ball into the egg whites, and then roll in granulated sugar to coat.
  • Place the dough balls on the prepared baking sheet. Use your thumb or the back of a spoon to make an indentation in the center of each cookie.
  • Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and immediately reinforce the indentations with the back of a spoon if needed.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Once the cookies are completely cooled, fill each indentation with lemon curd using a spoon or a piping bag.
