  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 3 cloves garlic minced

  • 1 tablespoon thyme fresh, finely chopped
  • 1 teaspoon oregano dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground

Instructions

  • In a bowl, combine the olive oil, lemon juice, minced garlic, chopped rosemary, thyme, oregano, salt, and black pepper. Whisk until well mixed.
  • Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb, ensuring each chop is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or up to 8 hours for more intense flavor.
  • Preheat your grill or a large skillet over medium-high heat. Remove the lamb chops from the marinade and let excess drip off. Discard the marinade.
  • Grill or pan-sear the lamb chops for about 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness.
  • Let the chops rest for a few minutes before serving to allow the juices to redistribute.
