Ingredients
  

  • 1 lb ground beef 80/20 lean-to-fat ratio recommended
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1 bag tortilla chips about 10-12 oz
  • 2 cups shredded cheddar cheese or a mix of cheddar and Monterey Jack
  • 1 can black beans 15 oz, rinsed and drained
  • 1 cup diced tomatoes fresh or canned
  • 1 avocado diced
  • 1/4 cup sliced jalapeños optional, for heat
  • 1/4 cup sliced green onions
  • 1/4 cup sour cream for serving
  • 1/4 cup salsa for serving

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a skillet over medium heat, cook the ground beef until browned, breaking it into small pieces as it cooks, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes until the mixture thickens slightly.
  4. Spread the tortilla chips evenly on the prepared baking sheet. Top with the seasoned ground beef, ensuring even distribution.
  5. Sprinkle the shredded cheese over the beef and chips. Add the black beans and diced tomatoes.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool slightly. Top with diced avocado, jalapeños, and green onions.
  8. Serve immediately with sour cream and salsa on the side.
